To Cook (Serves 6)
- 600g Sweet potatoes, peeled and cut into chunks
- 3 tbspn Salted Soy bean paste
- 1000 ml Water
- Salt and sugar to taste
- For Spice Paste
- 10 dried chillies
- ginger or galagal (3 slices)
- 2 tsp curry powder
- 1 tsp tumeric powder
- 3 tsp belachan (shrimp paste)
- Add water and sweet potatoes to boil until soft. Blend sweet potatoes with water in blender (add water if gravy is too thick).
- Pour back into pot and boil, add in the spice paste after fry till fragrant.
- Add in soy bean paste, salt and sugar to your own taste.
- Blanch noodles and bean sprouts into boiling water, then drain and place on plate. Pour gravy over noodle and garnish with other ingredients like tau kua, eggs (hard boiled), green chillies and lime.
