Stew Chicken with Meat Curry Powder (Jenny)

To Cook
- 1 Whole Chicken (about 1kg) cut into bite size pieces
- 3 Medium size potatoes (cut into cubes or wedges)
- 1 Carrot (cut into cubes)
- 2 sprigs Curry leaves
- 1 Big Onion
- 2 Finger length green chillies
- 3-5 Chilli Padi if you like it more spicy (optional)
- 2 tbsp lime juice
- Pepper to taste
- 2 knorr chicken cubes
- 3 tbsp Meat Curry Powder (1 tbsp for marinate)
- Wash clean chicken, drain it. Marinate with 1 tsp salt
- and 1 tbsp of meat curry powder for at least half an
- hour.
- Boil potatoes and carrots in 750 ml of water on medium
- fire for about 10 mins. Drain and keep the water for use
- later.
- Heat 2 tbsp of oil, fry onions, curry leaves, green
- chillies till fragrant
- Add chicken and stir fry till colour change. Pour in the
- water reserved from the boiling of the potatoes/carrots.
- Add the chicken cubes, curry powder, lime juice and
- pepper.
- Bring to boil, then lower fire and simmer for 20 mins or
- until meat is tender. Add in the potatoes and carrots and
- boil for further 10 mins. Ready to serve.
Notes
- You can remove the skin of chicken so that it is less oily.
