To Cook (Serves 6)

  • 250g caster sugar
  • 3 limes, 1 zested and 3 juiced
  • 1 pineapple, roughly chopped
  • 2 mangoes, roughly chopped
  • Bring the caster sugar, lime zest, lime juice and 200ml water to the boil. Simmer for 5 minutes, skim then cool.
  • Whizz the pineapple, mangoes and lime syrup until smooth.
  • Churn in an ice cream maker or freeze for 3-4 hours.
