To Cook (Serves 6)
- 250g caster sugar
- 3 limes, 1 zested and 3 juiced
- 1 pineapple, roughly chopped
- 2 mangoes, roughly chopped
- Bring the caster sugar, lime zest, lime juice and 200ml water to the boil. Simmer for 5 minutes, skim then cool.
- Whizz the pineapple, mangoes and lime syrup until smooth.
- Churn in an ice cream maker or freeze for 3-4 hours.
