To Cook (Serves 4)

  • 3 gelatine leaves
  • 300ml cranberry juice
  • 75g golden caster sugar
  • 100ml vodka
  • 100ml orange liqueur
  • 4 limes
  • Mixed berries
  • Soak the gelatine leaves in cold water for 5 minutes until softened, then squeeze out excess water.
  • Dissolve the sugar in half the cranberry juice over a low heat. Remove from heat and stir in the gelatine until dissolved.
  • Pour the rest of the juice, the vodka, orange liqueur and lime juice into a large jug. Strain in the gelatine mixture and stir.
  • Pour into martini glasses and chill overnight. Decorate with mixed berries.
