- Olive July 2010 - Cocktail jellies with summer berries
To Cook (Serves 4)
- 3 gelatine leaves
- 300ml cranberry juice
- 75g golden caster sugar
- 100ml vodka
- 100ml orange liqueur
- 4 limes
- Mixed berries
- Soak the gelatine leaves in cold water for 5 minutes until softened, then squeeze out excess water.
- Dissolve the sugar in half the cranberry juice over a low heat. Remove from heat and stir in the gelatine until dissolved.
- Pour the rest of the juice, the vodka, orange liqueur and lime juice into a large jug. Strain in the gelatine mixture and stir.
- Pour into martini glasses and chill overnight. Decorate with mixed berries.
